Ingredients

  • 8 oz fettuccine pasta
  • 1 can (14 oz) artichoke hearts, drained and quartered
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Bring a large pot of salted water to a boil over high heat. Add the fettuccine pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it burn.
  3. Add the artichoke hearts to the skillet and cook for about 5 minutes, stirring occasionally until they are heated through and slightly golden.
  4. Pour in the heavy cream and bring to a gentle simmer over medium-low heat. Stir in the grated Parmesan cheese, and season with salt and black pepper to taste. Let the sauce cook for about 5 minutes until it starts to thicken.
  5. Add the cooked fettuccine pasta to the skillet with the sauce. Toss well to coat the pasta evenly. Stir in the lemon juice and adjust seasoning if necessary.
  6. Serve the fettuccine immediately, garnished with additional Parmesan cheese and fresh parsley if desired.
