Ingredients
- 8 oz fettuccine pasta
- 1 can (14 oz) artichoke hearts, drained and quartered
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese, plus more for serving
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Bring a large pot of salted water to a boil over high heat. Add the fettuccine pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it burn.
- Add the artichoke hearts to the skillet and cook for about 5 minutes, stirring occasionally until they are heated through and slightly golden.
- Pour in the heavy cream and bring to a gentle simmer over medium-low heat. Stir in the grated Parmesan cheese, and season with salt and black pepper to taste. Let the sauce cook for about 5 minutes until it starts to thicken.
- Add the cooked fettuccine pasta to the skillet with the sauce. Toss well to coat the pasta evenly. Stir in the lemon juice and adjust seasoning if necessary.
- Serve the fettuccine immediately, garnished with additional Parmesan cheese and fresh parsley if desired.
