Ingredients

  • 1 tablespoon vegetable oil
  • 8 corn tortillas
  • 2 cups tomatoes, chopped
  • 1/4 cup onion, chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped
  • 1 cup queso fresco or feta cheese, crumbled
  • 1/4 cup sour cream (optional, for garnish)

Instructions

  1. In a medium saucepan over medium heat, add 1 tablespoon of vegetable oil. Add the chopped tomatoes, onion, and garlic. Cook for about 5 minutes, stirring occasionally, until the tomatoes have softened.
  2. Transfer the cooked tomato mixture to a blender. Add salt and black pepper. Blend until smooth. Carefully pour the mixture back into the saucepan and let it simmer over low heat while you prepare the tortillas.
  3. In a large pan over medium heat, warm the corn tortillas one at a time, about 30 seconds on each side until they are pliable. Wrap them in a kitchen towel to keep them warm.
  4. Dip each warm tortilla into the tomato sauce, ensuring both sides are well-coated. Place them on a serving plate. Fill each tortilla with about 2 tablespoons of crumbled queso fresco. Fold them in half or roll them up.
  5. Once all tortillas are filled and arranged, drizzle any remaining sauce over the top. Garnish with chopped cilantro and, if desired, a drizzle of sour cream. Serve immediately.
