Ingredients
- 1 tablespoon vegetable oil
- 8 corn tortillas
- 2 cups tomatoes, chopped
- 1/4 cup onion, chopped
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped
- 1 cup queso fresco or feta cheese, crumbled
- 1/4 cup sour cream (optional, for garnish)
Instructions
- In a medium saucepan over medium heat, add 1 tablespoon of vegetable oil. Add the chopped tomatoes, onion, and garlic. Cook for about 5 minutes, stirring occasionally, until the tomatoes have softened.
- Transfer the cooked tomato mixture to a blender. Add salt and black pepper. Blend until smooth. Carefully pour the mixture back into the saucepan and let it simmer over low heat while you prepare the tortillas.
- In a large pan over medium heat, warm the corn tortillas one at a time, about 30 seconds on each side until they are pliable. Wrap them in a kitchen towel to keep them warm.
- Dip each warm tortilla into the tomato sauce, ensuring both sides are well-coated. Place them on a serving plate. Fill each tortilla with about 2 tablespoons of crumbled queso fresco. Fold them in half or roll them up.
- Once all tortillas are filled and arranged, drizzle any remaining sauce over the top. Garnish with chopped cilantro and, if desired, a drizzle of sour cream. Serve immediately.
