Ingredients

  • 12 oz spaghetti or rice noodles
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon honey
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup warm water
  • 2 green onions, thinly sliced
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1/4 cup chopped peanuts
  • Fresh cilantro, for garnish

Instructions

  1. Fill a large pot with water and bring it to a boil over high heat. Once boiling, add the noodles and cook according to the package instructions, usually about 7-10 minutes. Stir occasionally to prevent sticking.
  2. While the noodles are cooking, prepare the peanut sauce. In a mixing bowl, combine peanut butter, soy sauce, rice vinegar, sesame oil, honey, grated ginger, garlic powder, red pepper flakes, and warm water. Use a whisk to mix until smooth and well combined. Tip: If the sauce seems too thick, add a little more warm water until you reach the desired consistency.
  3. When the noodles are done, drain them in a colander and rinse under cold water to stop the cooking process and cool them down. Tip: Toss the noodles gently with your hands to ensure they cool evenly.
  4. Transfer the cooled noodles to a large bowl. Pour the peanut sauce over the noodles and use tongs to toss them together until the noodles are evenly coated.
  5. Add the sliced green onions, cucumber, and carrot to the noodles. Toss everything together to distribute the vegetables throughout the dish.
