Ingredients
- 12 oz spaghetti or rice noodles
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 1 tablespoon honey
- 1 teaspoon grated fresh ginger
- 1/4 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes
- 1/4 cup warm water
- 2 green onions, thinly sliced
- 1 cucumber, julienned
- 1 carrot, julienned
- 1/4 cup chopped peanuts
- Fresh cilantro, for garnish
Instructions
- Fill a large pot with water and bring it to a boil over high heat. Once boiling, add the noodles and cook according to the package instructions, usually about 7-10 minutes. Stir occasionally to prevent sticking.
- While the noodles are cooking, prepare the peanut sauce. In a mixing bowl, combine peanut butter, soy sauce, rice vinegar, sesame oil, honey, grated ginger, garlic powder, red pepper flakes, and warm water. Use a whisk to mix until smooth and well combined. Tip: If the sauce seems too thick, add a little more warm water until you reach the desired consistency.
- When the noodles are done, drain them in a colander and rinse under cold water to stop the cooking process and cool them down. Tip: Toss the noodles gently with your hands to ensure they cool evenly.
- Transfer the cooled noodles to a large bowl. Pour the peanut sauce over the noodles and use tongs to toss them together until the noodles are evenly coated.
- Add the sliced green onions, cucumber, and carrot to the noodles. Toss everything together to distribute the vegetables throughout the dish.
