- In a blender or food processor, combine orange juice, lime juice, vinegar, achiote paste, cumin, oregano, black pepper, salt, and garlic. Blend until smooth and well combined.
- Place the pork chunks in a large mixing bowl. Pour the marinade over the pork, turning the pieces to ensure they are entirely coated. Cover the bowl and refrigerate for at least 4 hours or overnight for best results.
- Preheat your oven to 325°F (165°C).
- Line a baking dish or Dutch oven with banana leaves, ensuring enough overhang to wrap the pork completely. If banana leaves are unavailable, line the dish with aluminum foil.
- Add the marinated pork to the lined dish. Place sliced onions on top of the meat.
- Wrap the pork thoroughly with the banana leaves or foil. Cover the dish with a lid or another layer of foil to seal in the moisture.
- Place the dish in the preheated oven and bake for about 4 hours, or until the pork is tender and pulls apart easily with a fork.
- Carefully unwrap the pork, shred it using two forks, and serve. Top with chopped cilantro if desired.
