Ingredients

  • 4 large flour tortillas
  • 1 can (15 oz) refried beans
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1 tablespoon vegetable oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste
  • Optional: Sour cream and chopped cilantro for garnish

Instructions

  1. Prepare the refried beans: In a small saucepan, heat the refried beans over medium heat. Stir in the cumin, garlic powder, onion powder, and salt. Cook for 3-4 minutes until the beans are warmed through and fragrant. Stir occasionally to prevent sticking. Tip: Adjust seasonings to taste after the beans are warmed.
  2. Heat the tortillas: To soften the tortillas, wrap them in a slightly damp paper towel and microwave them for about 20-30 seconds. If you prefer, you can also heat each one in a dry skillet over medium heat for about 15 seconds on each side.
  3. Assemble the burritos: Lay one tortilla on a clean surface. Spread about 1/4 of the warmed beans down the center of the tortilla. Sprinkle 1/4 cup of cheese over the beans, followed by 2 tablespoons of salsa.
  4. Fold the burrito: Fold the sides of the tortilla over the filling, then roll from the bottom to the top to enclose the filling completely. Repeat with remaining tortillas and filling.
