Ingredients
- 2 pounds of fresh clams, scrubbed and rinsed
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- 1 teaspoon red pepper flakes (optional)
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
- Crusty bread for serving
Instructions
- Before you begin, ensure that the clams are scrubbed clean to remove any sand and grit. Discard any clams that are open and do not close when tapped.
- In a large pot or deep skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until it’s golden brown and fragrant – about 1 minute. Be careful not to burn the garlic as it can turn bitter.
- Pour the white wine into the pan and increase the heat to medium-high. Allow the wine to simmer for about 2 minutes to let the alcohol evaporate and to let the flavors meld together.
- Add the clams to the pan and cover with a lid. Steam the clams for about 5-7 minutes or until all the clams have opened up. Shake the pan occasionally to ensure even cooking. Discard any clams that do not open.
- Once the clams are cooked, add the red pepper flakes (if using) and the chopped parsley. Taste the broth and add salt and black pepper as needed, keeping in mind the clams are naturally salty.
