Ingredients

  • 1 pound (about 4 cups) russet potatoes, peeled and diced into 1/2 inch cubes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 pound chorizo sausage, casings removed
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1/4 cup fresh cilantro, chopped (optional)
  • Lime wedges for serving (optional)

Instructions

  1. Begin by preparing the potatoes. Place the diced potatoes in a microwave-safe bowl with a little water and cover them with a plate or plastic wrap. Microwave on high for 5 minutes to partially cook them, making them easier to fry later. Be careful when removing the covering as it will be hot.
  2. In a large skillet over medium-high heat, pour the olive oil. Once the oil is hot, add the par-cooked potatoes. Season them with salt and black pepper. Stir occasionally and cook for about 10 minutes until they start to get golden brown and tender.
  3. Move the potatoes to the side of the skillet and add the chorizo to the empty side. Break the chorizo into small pieces with a spatula and cook until it starts to brown and releases its oil, about 5 minutes.
  4. Once the chorizo is partially cooked, add the diced onion and red bell pepper to the skillet. Stir everything together and continue cooking until the vegetables are soft and the chorizo is cooked through, about 5 more minutes.
  5. Add the minced garlic and smoked paprika to the skillet, and stir to combine. Cook for another 1-2 minutes until the garlic is fragrant.
  6. Remove the skillet from the heat. If using, sprinkle the fresh cilantro over the top of the dish. Serve hot with lime wedges on the side for added freshness.
