Ingredients
- 1 pound boneless, skinless chicken breasts, cut into strips
- 1 tablespoon olive oil
- 1 tablespoon chipotle chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup white rice
- 2 cups chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- 4 large flour tortillas
- 1 cup shredded cheese (cheddar or mexican blend)
- 1 cup salsa
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Heat olive oil in a large pan over medium heat. Add chicken strips, chipotle chili powder, cumin, smoked paprika, salt, and pepper. Cook until chicken is browned and cooked through, about 8-10 minutes. Remove from heat and set aside.
- In a medium saucepan, bring chicken broth to a boil. Add rice, reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and broth is absorbed. Fluff with a fork and set aside.
- Warm the black beans in a small saucepan over low heat. Stir occasionally until heated through, about 5 minutes.
- Preheat oven to 350°F. Wrap tortillas in aluminum foil and warm in the oven for 5 minutes.
- Assemble the burritos: Lay a warm tortilla flat. Add a portion of chicken, rice, beans, cheese, and salsa to the center. Top with avocado slices and cilantro.
- Fold the sides of the tortilla over the filling, then roll up from the bottom, keeping the burrito tight. Repeat with remaining tortillas and fillings.
