Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 1 tablespoon olive oil
  • 1 tablespoon chipotle chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup white rice
  • 2 cups chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or mexican blend)
  • 1 cup salsa
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. Heat olive oil in a large pan over medium heat. Add chicken strips, chipotle chili powder, cumin, smoked paprika, salt, and pepper. Cook until chicken is browned and cooked through, about 8-10 minutes. Remove from heat and set aside.
  2. In a medium saucepan, bring chicken broth to a boil. Add rice, reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and broth is absorbed. Fluff with a fork and set aside.
  3. Warm the black beans in a small saucepan over low heat. Stir occasionally until heated through, about 5 minutes.
  4. Preheat oven to 350°F. Wrap tortillas in aluminum foil and warm in the oven for 5 minutes.
  5. Assemble the burritos: Lay a warm tortilla flat. Add a portion of chicken, rice, beans, cheese, and salsa to the center. Top with avocado slices and cilantro.
  6. Fold the sides of the tortilla over the filling, then roll up from the bottom, keeping the burrito tight. Repeat with remaining tortillas and fillings.
