Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup salsa
  • 1 cup cheddar cheese, shredded
  • 1 cup refried beans
  • 4 large flour tortillas
  • Vegetable oil, for frying
  • Salt, to taste
  • Optional toppings: sour cream, guacamole, chopped cilantro, diced tomatoes

Instructions

  1. In a large mixing bowl, combine shredded chicken, salsa, and half of the cheddar cheese. Stir well to combine.
  2. Spread a quarter of the refried beans onto the center of one tortilla. Leave some space around the edges.
  3. Spoon a quarter of the chicken mixture over the beans on the tortilla. Sprinkle extra cheddar cheese over the top.
  4. Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top to form a burrito shape. Use toothpicks to secure if needed.
  5. Repeat steps 2-4 with the remaining tortillas and filling.
  6. In a deep skillet, pour enough vegetable oil to cover the bottom about 2 inches deep. Heat the oil to 350°F (175°C). A thermometer can help you check the temperature accurately.
  7. Carefully place one or two chimichangas in the hot oil. Fry them until golden brown and crispy, approximately 3-4 minutes per side.
  8. Using tongs, remove the chimichangas from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with a little salt.
  9. Repeat the frying process with the remaining chimichangas.
  10. Serve hot with optional toppings like sour cream, guacamole, chopped cilantro, and diced tomatoes. Enjoy your homemade chimichangas!
