Ingredients
- 2 cups shredded cooked chicken
- 1 cup salsa
- 1 cup cheddar cheese, shredded
- 1 cup refried beans
- 4 large flour tortillas
- Vegetable oil, for frying
- Salt, to taste
- Optional toppings: sour cream, guacamole, chopped cilantro, diced tomatoes
Instructions
- In a large mixing bowl, combine shredded chicken, salsa, and half of the cheddar cheese. Stir well to combine.
- Spread a quarter of the refried beans onto the center of one tortilla. Leave some space around the edges.
- Spoon a quarter of the chicken mixture over the beans on the tortilla. Sprinkle extra cheddar cheese over the top.
- Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top to form a burrito shape. Use toothpicks to secure if needed.
- Repeat steps 2-4 with the remaining tortillas and filling.
- In a deep skillet, pour enough vegetable oil to cover the bottom about 2 inches deep. Heat the oil to 350°F (175°C). A thermometer can help you check the temperature accurately.
- Carefully place one or two chimichangas in the hot oil. Fry them until golden brown and crispy, approximately 3-4 minutes per side.
- Using tongs, remove the chimichangas from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with a little salt.
- Repeat the frying process with the remaining chimichangas.
- Serve hot with optional toppings like sour cream, guacamole, chopped cilantro, and diced tomatoes. Enjoy your homemade chimichangas!
