Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley (optional)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Season both sides of the chicken breasts with salt, pepper, garlic powder, and Italian seasoning. Set aside.
  3. In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the chicken breasts and sear for 2-3 minutes on each side until golden brown. Transfer the chicken to a plate.
  4. In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced zucchini and sauté for 3-4 minutes until they start to soften. Stir occasionally.
  5. Return the chicken breasts to the skillet, nestling them among the zucchini slices. Pour the chicken broth and lemon juice over the chicken and zucchini.
  6. Transfer the skillet to the preheated oven and bake for 15-18 minutes, or until the chicken is cooked through and reaches an internal temperature of 165 degrees Fahrenheit.
  7. Carefully remove the skillet from the oven using oven mitts, as it will be hot.
  8. Sprinkle with fresh parsley and Parmesan cheese, if using. Let the dish rest for a few minutes before serving.
