Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 medium zucchinis, sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian seasoning
- 1/2 cup chicken broth
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh parsley (optional)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat your oven to 375 degrees Fahrenheit.
- Season both sides of the chicken breasts with salt, pepper, garlic powder, and Italian seasoning. Set aside.
- In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the chicken breasts and sear for 2-3 minutes on each side until golden brown. Transfer the chicken to a plate.
- In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced zucchini and sauté for 3-4 minutes until they start to soften. Stir occasionally.
- Return the chicken breasts to the skillet, nestling them among the zucchini slices. Pour the chicken broth and lemon juice over the chicken and zucchini.
- Transfer the skillet to the preheated oven and bake for 15-18 minutes, or until the chicken is cooked through and reaches an internal temperature of 165 degrees Fahrenheit.
- Carefully remove the skillet from the oven using oven mitts, as it will be hot.
- Sprinkle with fresh parsley and Parmesan cheese, if using. Let the dish rest for a few minutes before serving.
