Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, roughly chopped
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Start by preparing all the ingredients. Mince the garlic cloves, halve the cherry tomatoes and roughly chop the basil leaves.
  2. Season the chicken breasts generously with salt and pepper on both sides.
  3. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts. Cook for about 6-7 minutes on each side or until they are golden brown and cooked through, with an internal temperature of 165 degrees Fahrenheit.
  4. Remove the chicken from the skillet and set aside on a plate.
  5. In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant, stirring continually to ensure it doesn’t burn.
  6. Add the halved cherry tomatoes to the skillet. Cook for about 4-5 minutes until they start to soften and release their juices.
  7. Return the chicken breasts to the skillet, spoon the tomato mixture over the top, and let them warm through for another 2 minutes.
  8. Sprinkle the fresh basil over the chicken and tomatoes. If using, add the Parmesan cheese on top for extra flavor.
