Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 pint cherry tomatoes, halved
- 1/2 cup fresh basil leaves, roughly chopped
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Start by preparing all the ingredients. Mince the garlic cloves, halve the cherry tomatoes and roughly chop the basil leaves.
- Season the chicken breasts generously with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts. Cook for about 6-7 minutes on each side or until they are golden brown and cooked through, with an internal temperature of 165 degrees Fahrenheit.
- Remove the chicken from the skillet and set aside on a plate.
- In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant, stirring continually to ensure it doesn’t burn.
- Add the halved cherry tomatoes to the skillet. Cook for about 4-5 minutes until they start to soften and release their juices.
- Return the chicken breasts to the skillet, spoon the tomato mixture over the top, and let them warm through for another 2 minutes.
- Sprinkle the fresh basil over the chicken and tomatoes. If using, add the Parmesan cheese on top for extra flavor.
