Ingredients

  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 1 tablespoon vegetable oil
  • 2 cups snow peas, trimmed
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/4 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the sliced chicken with soy sauce and cornstarch. Mix well and set aside to marinate for 10 minutes while you prepare the other ingredients.
  2. Heat a large non-stick skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil.
  3. Once the oil is hot, add the marinated chicken to the skillet. Cook for about 5 minutes, stirring frequently, until the chicken is cooked through and slightly browned. Remove the chicken from the skillet and set it aside.
  4. In the same skillet, add the snow peas, garlic, and ginger. Stir-fry for about 2 minutes until the snow peas are bright green and tender-crisp.
  5. Return the cooked chicken to the skillet. Add the oyster sauce, sesame oil, and chicken broth. Stir everything together and cook for an additional 3 minutes until the sauce thickens slightly. Season with salt and pepper to taste.

  7. To prevent the chicken from sticking to the skillet, make sure it’s fully heated before adding the oil.
