Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs total)
  • 1 oz dried porcini mushrooms
  • 2 cups chicken broth, low sodium
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/2 cup heavy cream
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place the dried porcini mushrooms in a bowl and pour 1 cup of hot chicken broth over them. Let them soak for 15 minutes to rehydrate, then drain and chop them. Reserve the soaking liquid.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side or until golden and cooked through. Remove the chicken from the skillet and set aside, keeping it warm.
  4. In the same skillet, add the chopped onion and garlic. Sauté for about 2 minutes until the onion is soft and translucent.
  5. Add the chopped porcini mushrooms to the skillet and cook for another 2 minutes.
  6. Pour in the white wine and let it simmer until reduced by half, about 3-4 minutes.
  7. Add the reserved mushroom soaking liquid (avoid any sediment), the remaining cup of chicken broth, and the heavy cream. Bring to a gentle simmer and let it cook until slightly thickened, about 5 minutes. Stir occasionally.
  8. Return the chicken breasts to the skillet, and let them simmer in the sauce for another 5 minutes, ensuring they are well-coated with the sauce.
  9. Garnish with fresh parsley before serving. Serve the chicken and sauce with your choice of sides, such as mashed potatoes or rice.
