Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs total)
- 1 oz dried porcini mushrooms
- 2 cups chicken broth, low sodium
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 1/2 cup heavy cream
- Salt and freshly ground black pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Place the dried porcini mushrooms in a bowl and pour 1 cup of hot chicken broth over them. Let them soak for 15 minutes to rehydrate, then drain and chop them. Reserve the soaking liquid.
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side or until golden and cooked through. Remove the chicken from the skillet and set aside, keeping it warm.
- In the same skillet, add the chopped onion and garlic. Sauté for about 2 minutes until the onion is soft and translucent.
- Add the chopped porcini mushrooms to the skillet and cook for another 2 minutes.
- Pour in the white wine and let it simmer until reduced by half, about 3-4 minutes.
- Add the reserved mushroom soaking liquid (avoid any sediment), the remaining cup of chicken broth, and the heavy cream. Bring to a gentle simmer and let it cook until slightly thickened, about 5 minutes. Stir occasionally.
- Return the chicken breasts to the skillet, and let them simmer in the sauce for another 5 minutes, ensuring they are well-coated with the sauce.
- Garnish with fresh parsley before serving. Serve the chicken and sauce with your choice of sides, such as mashed potatoes or rice.
