Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup unsalted pistachios, shelled
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a food processor, pulse the pistachios until they are finely chopped. Be careful not to over-process; the texture should be crumbly, not paste-like.
  3. In a bowl, combine the chopped pistachios, breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Stir until well mixed.
  4. In another small bowl, mix together the Dijon mustard and olive oil until smooth. This mixture will help the pistachio crust stick to the chicken. If you don’t have Dijon, you can use whole-grain mustard as an alternative.
