Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 can (14 ounces) diced tomatoes, with juice
- 1 cup green olives, pitted and sliced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
- 1 lemon, cut into wedges
Instructions
- Before starting, gather all your ingredients and tools. You’ll need a large skillet, a wooden spoon, and a knife for chopping. Preparation makes cooking easier.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Wait a minute or two to ensure the oil is hot. This will prevent the chicken from sticking.
- Season the chicken breasts with salt and pepper on both sides. Carefully place them in the skillet. Cook for 5-7 minutes on each side, until golden brown. Using a spatula, transfer the chicken to a plate.
- In the same skillet, add chopped onion and minced garlic. Sauté for about 3 minutes, stirring frequently, until the onion is translucent. This will add depth to the flavor of your sauce.
- Add 1 cup of chicken broth and the can of diced tomatoes with juice. Stir gently to combine. Bring the mixture to a gentle simmer, helping the flavors meld.
- Return the chicken breasts to the skillet. Add the sliced green olives and a teaspoon of dried oregano. Cover the skillet and let it simmer gently for 20 minutes. This will infuse the chicken with the sauce’s flavors.
- After 20 minutes, check the chicken by cutting into the thickest part to ensure there’s no pink; the juices should run clear. Adjust seasoning if necessary.
- Turn off the heat. Garnish your dish with freshly chopped parsley and serve with lemon wedges on the side for an extra burst of freshness.
