Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1/2 cup whole grain mustard
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Instructions
- Preheat your oven to 375°F (190°C). This ensures it’s hot enough by the time the chicken is prepared.
- Season both sides of the chicken breasts with salt and pepper lightly. This enhances the natural flavor of the chicken.
- In a large ovenproof skillet, heat the olive oil over medium-high heat. Wait until the oil shimmers before adding the chicken.
- Place the chicken breasts in the skillet and sear them for 3-4 minutes on each side until golden brown. This step locks in the juices.
- While the chicken is searing, mix together the mustard, honey, minced garlic, thyme, and rosemary in a small bowl to form a sauce.
- Once the chicken is browned, pour the mustard and honey sauce over the chicken evenly.
- Transfer the skillet to the preheated oven. If you do not have an ovenproof skillet, transfer the chicken and sauce to a baking dish first.
- Bake in the oven for 15-20 minutes, or until the internal temperature of the chicken reaches 165°F (74°C). Use a meat thermometer to check for doneness.
- Remove the skillet from the oven using oven mitts to avoid burns. Let the chicken rest for 5 minutes before serving to allow the juices to redistribute.
- Serve the chicken with your choice of sides, such as roasted vegetables or rice. Drizzle any remaining sauce from the pan over the chicken for extra flavor.
