Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1/2 cup whole grain mustard
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

  1. Preheat your oven to 375°F (190°C). This ensures it’s hot enough by the time the chicken is prepared.
  2. Season both sides of the chicken breasts with salt and pepper lightly. This enhances the natural flavor of the chicken.
  3. In a large ovenproof skillet, heat the olive oil over medium-high heat. Wait until the oil shimmers before adding the chicken.
  4. Place the chicken breasts in the skillet and sear them for 3-4 minutes on each side until golden brown. This step locks in the juices.
  5. While the chicken is searing, mix together the mustard, honey, minced garlic, thyme, and rosemary in a small bowl to form a sauce.
  6. Once the chicken is browned, pour the mustard and honey sauce over the chicken evenly.
  7. Transfer the skillet to the preheated oven. If you do not have an ovenproof skillet, transfer the chicken and sauce to a baking dish first.
  8. Bake in the oven for 15-20 minutes, or until the internal temperature of the chicken reaches 165°F (74°C). Use a meat thermometer to check for doneness.
  9. Remove the skillet from the oven using oven mitts to avoid burns. Let the chicken rest for 5 minutes before serving to allow the juices to redistribute.
  10. Serve the chicken with your choice of sides, such as roasted vegetables or rice. Drizzle any remaining sauce from the pan over the chicken for extra flavor.
