Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 8 ounces button mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Season the chicken breasts on both sides with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat. Tip: Make sure the skillet is hot before adding the chicken to prevent sticking.
  3. Once the oil is hot, carefully add the chicken breasts. Cook for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.
  4. In the same skillet, reduce the heat to medium and add the unsalted butter. Allow the butter to melt before adding the sliced mushrooms. Cook the mushrooms for about 5 minutes, stirring occasionally, until they are softened and starting to brown.
  5. Add the minced garlic to the mushrooms and sauté for another minute. Be careful not to burn the garlic as it can become bitter.
  6. Pour the chicken broth into the skillet, scraping up any bits from the bottom of the pan with a wooden spoon. Bring to a simmer and let it reduce by half.
  7. Stir in the heavy cream and dried thyme. Cook for another 2-3 minutes until the sauce thickens slightly. Taste and adjust the seasoning with salt and pepper, if necessary.
  8. Return the cooked chicken breasts to the skillet, spooning the sauce and mushrooms over them. Allow the chicken to warm through for about 3 minutes.
  9. Garnish with chopped fresh parsley before serving, if desired.
