Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 8 ounces button mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (optional, for garnish)
Instructions
- Season the chicken breasts on both sides with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat. Tip: Make sure the skillet is hot before adding the chicken to prevent sticking.
- Once the oil is hot, carefully add the chicken breasts. Cook for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.
- In the same skillet, reduce the heat to medium and add the unsalted butter. Allow the butter to melt before adding the sliced mushrooms. Cook the mushrooms for about 5 minutes, stirring occasionally, until they are softened and starting to brown.
- Add the minced garlic to the mushrooms and sauté for another minute. Be careful not to burn the garlic as it can become bitter.
- Pour the chicken broth into the skillet, scraping up any bits from the bottom of the pan with a wooden spoon. Bring to a simmer and let it reduce by half.
- Stir in the heavy cream and dried thyme. Cook for another 2-3 minutes until the sauce thickens slightly. Taste and adjust the seasoning with salt and pepper, if necessary.
- Return the cooked chicken breasts to the skillet, spooning the sauce and mushrooms over them. Allow the chicken to warm through for about 3 minutes.
- Garnish with chopped fresh parsley before serving, if desired.
