Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 lemons (zest and juice)
- 4 garlic cloves, minced
- 1 tablespoon fresh thyme leaves
- 1/2 cup chicken broth
- 1 tablespoon butter
Instructions
- Preheat your oven to 375°F (190°C).
- Place the chicken breasts on a cutting board. Season both sides with salt and black pepper.
- In a large ovenproof skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear them for about 2-3 minutes on each side until golden brown. Tip: Avoid moving the chicken while searing to ensure a nice golden crust.
- Once seared, remove the chicken from the skillet and set aside.
- Reduce the heat to medium and add the minced garlic to the same skillet, sautéing for 30 seconds until fragrant. Be careful not to let the garlic burn.
- Add the lemon zest, juice of the lemons, fresh thyme, and chicken broth. Stir to combine, bringing the mixture to a simmer.
- Return the chicken breasts to the skillet. Spoon some of the lemon mixture over the chicken.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Once cooked, carefully remove the skillet from the oven. Add the butter to the skillet and swirl it around until it melts into the sauce.
- Serve the chicken with the lemon sauce drizzled over the top. Optional: Garnish with additional thyme or lemon slices.
