Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 lemons (zest and juice)
  • 4 garlic cloves, minced
  • 1 tablespoon fresh thyme leaves
  • 1/2 cup chicken broth
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts on a cutting board. Season both sides with salt and black pepper.
  3. In a large ovenproof skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear them for about 2-3 minutes on each side until golden brown. Tip: Avoid moving the chicken while searing to ensure a nice golden crust.
  4. Once seared, remove the chicken from the skillet and set aside.
  5. Reduce the heat to medium and add the minced garlic to the same skillet, sautéing for 30 seconds until fragrant. Be careful not to let the garlic burn.
  6. Add the lemon zest, juice of the lemons, fresh thyme, and chicken broth. Stir to combine, bringing the mixture to a simmer.
  7. Return the chicken breasts to the skillet. Spoon some of the lemon mixture over the chicken.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  9. Once cooked, carefully remove the skillet from the oven. Add the butter to the skillet and swirl it around until it melts into the sauce.
  10. Serve the chicken with the lemon sauce drizzled over the top. Optional: Garnish with additional thyme or lemon slices.
