Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 lemon, thinly sliced
- 3 tablespoons fresh thyme leaves
- 4 garlic cloves, minced
- 1 cup chicken broth
- 1 tablespoon butter
Instructions
- Preheat your oven to 375°F (190°C). This will ensure the oven is hot enough for even cooking.
- Season the chicken breasts evenly on both sides with salt and black pepper.
- Heat the olive oil in a frying pan over medium-high heat. Once hot, add the chicken breasts and sear for about 3-4 minutes on each side until they are golden brown.
- Transfer the seared chicken breasts to a baking dish. Arrange the lemon slices and sprinkle the thyme leaves and minced garlic over the chicken.
- Pour the chicken broth into the baking dish around the chicken breasts.
- Place the baking dish in the preheated oven and bake for 25-30 minutes or until the chicken is cooked through, reaching an internal temperature of 165°F (74°C).
- Once baked, remove the chicken from the oven and let it rest for a few minutes. Meanwhile, in a small pan, melt the butter and then spoon it over the chicken for added flavor and a glossy finish.
