Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 4 ounces Gorgonzola cheese, crumbled
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped (optional for garnish)

Instructions

  1. Season the chicken breasts on both sides with salt and pepper.
  2. In a large skillet over medium-high heat, add olive oil and butter. Allow the butter to melt completely and start to sizzle.
  3. Add the chicken breasts to the skillet. Cook for about 7 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the pan and set aside.
  4. In the same pan, add minced garlic and thyme. Sauté for about 30 seconds until fragrant. Pour in the chicken broth and let it simmer for 2 minutes, scraping the bottom of the pan to loosen any browned bits.
  5. Reduce the heat to low and stir in the heavy cream and crumbled Gorgonzola cheese. Stir continuously until the cheese has melted and the sauce is smooth and creamy. Taste and adjust the seasoning with salt and pepper if necessary.
  6. Return the chicken breasts to the skillet, spooning the sauce over them. Let them simmer in the sauce for about 5 minutes to absorb the flavors.
  7. Place the chicken breasts on a serving platter and spoon the remaining sauce over the top. Garnish with chopped parsley if desired. Serve hot.
