Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 pound fresh asparagus
  • 2 tablespoons olive oil
  • 3 cloves of garlic, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat your oven to 400°F. Before you start, gather all your ingredients and kitchen equipment. This will make the cooking process smoother.
  2. Wash and trim the asparagus by cutting off the tough ends, usually about 1 to 2 inches from the bottom. Set aside.
  3. Pat the chicken breasts dry with paper towels. Season them generously with salt and black pepper on both sides.
  4. Heat 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat. Once hot, add the chicken breasts. Cook each side for 3-4 minutes until golden brown. You do not need to cook them all the way through right now.
  5. Remove the chicken from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 30 seconds until fragrant but not browned.
  6. Add the asparagus spears and sauté for 2-3 minutes until they start to become tender. Stir occasionally to prevent burning.
  7. Return the chicken to the skillet, placing it on top of the asparagus. Pour lemon juice and sprinkle lemon zest over the chicken and asparagus. Top each chicken breast with a dab of butter.
  8. Transfer the skillet to the preheated oven and bake for 15 minutes, or until the chicken is cooked through and has an internal temperature of 165°F. This can be checked using a meat thermometer.
  9. Remove the skillet from the oven and carefully transfer the chicken to a serving platter. Sprinkle with grated Parmesan cheese and chopped fresh parsley for added flavor and presentation if desired.
  10. Serve immediately. This dish pairs well with cooked rice or mashed potatoes to soak up the flavorful sauce.
