- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil, divided
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 5 cups fresh arugula
- 1 lemon, juiced and zested
- 1 tablespoon balsamic vinegar
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C). Use an oven-safe skillet or a baking dish for this recipe.
- Lay the chicken breasts on a clean cutting board. Pat them dry using paper towels. Drying the chicken helps to achieve a nice sear.
- Season each side of the chicken breasts with salt, pepper, garlic powder, and dried oregano. Make sure to season evenly for the best flavor.
- Heat 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat. Once the oil shimmers, carefully add the chicken breasts to the hot skillet.
