- 2 tablespoons olive oil
- 1 can (14 oz) artichoke hearts, drained and quartered
- 1 cup cherry tomatoes, halved
- 1/2 cup chicken broth
- 1 tablespoon lemon juice
- 3 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
Instructions
- Start by seasoning the chicken breasts generously with salt and pepper on both sides.
- Heat the olive oil in a large skillet over medium-high heat. TIP: Use a large skillet to ensure you have enough space to cook the chicken evenly.
- Once the oil is hot but not smoking, add the chicken breasts to the skillet. Cook for about 5-7 minutes on each side, or until they are golden brown and fully cooked to an internal temperature of 165°F.
- While the chicken is cooking, prepare your other ingredients. Drain and quarter the artichoke hearts, halve the cherry tomatoes, and mince the garlic.
