Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tin (2 ounces) anchovy fillets, drained and finely chopped
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 1/4 cup dry white wine
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons unsalted butter
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Pat the chicken breasts dry with paper towels to ensure a good sear.
  3. In a large oven-proof skillet, heat the olive oil over medium-high heat.
  4. Add the chicken breasts to the skillet and sear for 3-4 minutes on each side, or until golden brown. Remove chicken and set aside.
  5. Reduce heat to medium and add minced garlic to the skillet. Sauté for 30 seconds until fragrant, being careful not to burn.
  6. Add chopped anchovies, thyme, oregano, and black pepper to the skillet. Stir to combine and cook for another 1 minute.
  7. Pour in the chicken broth and white wine, scraping any brown bits from the bottom of the skillet with a wooden spoon. This process is called deglazing.
  8. Stir in the lemon juice and simmer the sauce for 5 minutes to allow flavors to meld.
  9. Return the chicken breasts to the skillet, turning them over to coat in the sauce. Dot the chicken with butter.
  10. Transfer the skillet to the preheated oven and bake for 20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165 degrees Fahrenheit.
  11. Carefully remove the skillet from the oven using oven mitts as it will be hot. Allow the chicken to rest for 5 minutes.
