Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tin (2 ounces) anchovy fillets, drained and finely chopped
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1 cup chicken broth
- 1/4 cup dry white wine
- 2 tablespoons fresh lemon juice
- 2 tablespoons unsalted butter
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Preheat your oven to 375 degrees Fahrenheit.
- Pat the chicken breasts dry with paper towels to ensure a good sear.
- In a large oven-proof skillet, heat the olive oil over medium-high heat.
- Add the chicken breasts to the skillet and sear for 3-4 minutes on each side, or until golden brown. Remove chicken and set aside.
- Reduce heat to medium and add minced garlic to the skillet. Sauté for 30 seconds until fragrant, being careful not to burn.
- Add chopped anchovies, thyme, oregano, and black pepper to the skillet. Stir to combine and cook for another 1 minute.
- Pour in the chicken broth and white wine, scraping any brown bits from the bottom of the skillet with a wooden spoon. This process is called deglazing.
- Stir in the lemon juice and simmer the sauce for 5 minutes to allow flavors to meld.
- Return the chicken breasts to the skillet, turning them over to coat in the sauce. Dot the chicken with butter.
- Transfer the skillet to the preheated oven and bake for 20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165 degrees Fahrenheit.
- Carefully remove the skillet from the oven using oven mitts as it will be hot. Allow the chicken to rest for 5 minutes.
