Ingredients

  • 4 boneless, skinless chicken breast halves
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/4 cup olive oil
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh basil

Instructions

  1. Preheat your oven to 400°F. It’s important to have it nice and hot for that perfect finish.
  2. Start by placing the chicken breasts between two pieces of plastic wrap. Give them a good pound with a meat mallet until they’re about 1/2 inch thick. This makes them cook evenly.
  3. Gather three shallow dishes for a little breading station. Place the flour in one, beat the eggs in another, and mix breadcrumbs with the Parmesan cheese, salt, pepper, garlic powder, and oregano in the third.
  4. Now, coat each chicken breast in the flour, shake off the excess, dip into the eggs, and then press into the breadcrumb mixture. Make sure they’re well covered.
  5. Heat the olive oil in a large skillet over medium heat. Once it’s shimmering, add the chicken breasts in batches. Fry them until they’re golden brown on each side, which should take about 3 to 4 minutes per side.
  6. Place the fried chicken breasts in a baking dish. Spoon the marinara sauce over each piece generously. Then, sprinkle the mozzarella cheese on top.
  7. Bake in the preheated oven for about 15 minutes, or until the cheese is bubbly and starting to brown. It’ll make the kitchen smell delightful.
  8. Remove from the oven carefully — things will be hot! Let it sit for a minute or two. Then, scatter fresh basil over the top before serving. Enjoy with a side of spaghetti or a fresh salad.
