Ingredients
- 4 boneless, skinless chicken breast halves
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/4 cup olive oil
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped fresh basil
Instructions
- Preheat your oven to 400°F. It’s important to have it nice and hot for that perfect finish.
- Start by placing the chicken breasts between two pieces of plastic wrap. Give them a good pound with a meat mallet until they’re about 1/2 inch thick. This makes them cook evenly.
- Gather three shallow dishes for a little breading station. Place the flour in one, beat the eggs in another, and mix breadcrumbs with the Parmesan cheese, salt, pepper, garlic powder, and oregano in the third.
- Now, coat each chicken breast in the flour, shake off the excess, dip into the eggs, and then press into the breadcrumb mixture. Make sure they’re well covered.
- Heat the olive oil in a large skillet over medium heat. Once it’s shimmering, add the chicken breasts in batches. Fry them until they’re golden brown on each side, which should take about 3 to 4 minutes per side.
- Place the fried chicken breasts in a baking dish. Spoon the marinara sauce over each piece generously. Then, sprinkle the mozzarella cheese on top.
- Bake in the preheated oven for about 15 minutes, or until the cheese is bubbly and starting to brown. It’ll make the kitchen smell delightful.
- Remove from the oven carefully — things will be hot! Let it sit for a minute or two. Then, scatter fresh basil over the top before serving. Enjoy with a side of spaghetti or a fresh salad.
