Ingredients
- 2 large boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 eggs
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- Salt to taste
- Pepper to taste
- 1/4 cup olive oil
- 1 tablespoon butter
- Lemon wedges for garnish
Instructions
- First, lay the chicken breasts between two pieces of plastic wrap on a sturdy surface.
- Using a meat mallet, gently pound the chicken breasts to a uniform thickness of about 1/4 inch. This helps them cook evenly. Tip: Be careful not to tear the meat.
- Season both sides of the chicken breasts with salt and pepper.
- Set up your breading station with three shallow dishes. In one, add the flour. In the second, beat the eggs until smooth. In the third, mix the breadcrumbs with the grated Parmesan cheese.
- Dredge each chicken breast in flour, shaking off any excess. Then dip into the beaten eggs, and finally coat evenly in the breadcrumb mixture. Ensure both sides are well covered for an even crust.
- In a large skillet, heat the olive oil and butter over medium heat. The butter adds flavor while the oil prevents it from burning. The oil should be about 350°F.
- Carefully lay the breaded chicken pieces in the hot skillet. Cook for 4-5 minutes on each side, or until golden brown and cooked through. Tip: Use tongs to flip the chicken to keep the breading intact.
- Transfer the cooked chicken to a plate lined with paper towels to drain any excess oil. Tip: Keep cooked pieces warm in a low-temperature oven while you cook the others.
- Serve the chicken Milanese hot, garnished with lemon wedges for a fresh citrus flavor.
