Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1 cup canned black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 cup salsa
  • 1 avocado, diced
  • 1 cup shredded lettuce
  • 1 tomato, diced

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add diced chicken to the skillet. Cook, stirring occasionally, until the chicken is browned and cooked through, about 8-10 minutes.
  3. Sprinkle taco seasoning over the chicken, add 1/2 cup of water. Stir well to coat all the chicken pieces. Reduce heat to medium and simmer for 5 minutes, allowing the sauce to thicken. Tip: If you prefer spicier burritos, add a pinch of cayenne pepper.
  4. Warm the flour tortillas in another pan over low heat or wrap them in foil and place in a 350°F preheated oven for 5 minutes. A warm tortilla is easier to fold and roll.
  5. To assemble the burritos, lay a warm tortilla flat on your work surface. In the center, layer 1/4 of the cooked rice, black beans, cooked chicken, shredded cheese, a dollop of sour cream, salsa, diced avocado, shredded lettuce, and diced tomato.
  6. Fold the sides of the tortilla over the filling, then starting from the bottom, roll it tightly up to secure all ingredients inside. Tip: Use a piece of foil to wrap your burrito and keep everything in place, especially if serving later or on the go.
  7. Repeat with the remaining tortillas and ingredients.
