Ingredients
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, diced
- 1 packet taco seasoning mix
- 1/2 cup water
- 4 large flour tortillas
- 1 cup cooked rice
- 1 cup canned black beans, rinsed and drained
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 cup salsa
- 1 avocado, diced
- 1 cup shredded lettuce
- 1 tomato, diced
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add diced chicken to the skillet. Cook, stirring occasionally, until the chicken is browned and cooked through, about 8-10 minutes.
- Sprinkle taco seasoning over the chicken, add 1/2 cup of water. Stir well to coat all the chicken pieces. Reduce heat to medium and simmer for 5 minutes, allowing the sauce to thicken. Tip: If you prefer spicier burritos, add a pinch of cayenne pepper.
- Warm the flour tortillas in another pan over low heat or wrap them in foil and place in a 350°F preheated oven for 5 minutes. A warm tortilla is easier to fold and roll.
- To assemble the burritos, lay a warm tortilla flat on your work surface. In the center, layer 1/4 of the cooked rice, black beans, cooked chicken, shredded cheese, a dollop of sour cream, salsa, diced avocado, shredded lettuce, and diced tomato.
- Fold the sides of the tortilla over the filling, then starting from the bottom, roll it tightly up to secure all ingredients inside. Tip: Use a piece of foil to wrap your burrito and keep everything in place, especially if serving later or on the go.
- Repeat with the remaining tortillas and ingredients.
