Ingredients

  • 1 1/2 lbs pork shoulder (cut into 2-inch pieces)
  • 1 tablespoon vegetable oil
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 orange, juiced
  • 2 limes, juiced
  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1 cup canned black beans, rinsed and drained
  • 1/2 cup shredded cheese
  • 1/2 cup salsa
  • 1/4 cup chopped cilantro
  • 1 avocado, sliced
  • Sour cream (optional)

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Heat vegetable oil in a large ovenproof pot over medium-high heat. Add pork in batches, browning the pieces on all sides, about 8 minutes per batch.
  3. Return all pork to the pot. Add chicken broth, salt, pepper, cumin, oregano, onion, garlic, orange juice, and lime juice. Stir to combine.
  4. Bring the mixture to a simmer, then cover and transfer to the preheated oven. Cook until the pork is very tender, about 2 hours.
  5. Remove the pot from the oven. Use a slotted spoon to remove pork from cooking liquid and transfer to a large bowl. Shred the pork using two forks.
  6. Heat the flour tortillas according to package instructions to make them pliable.
  7. To assemble the burrito, lay a warm tortilla on a flat surface. Spoon a portion of the shredded pork onto the center, followed by rice, beans, cheese, salsa, cilantro, avocado, and a dollop of sour cream, if using.
  8. Fold the sides of the tortilla over the filling, then roll up tightly from the bottom, ensuring everything stays inside the burrito.
  9. Repeat with remaining tortillas and filling ingredients to make a total of 4 burritos.
