Ingredients
- 1 1/2 lbs pork shoulder (cut into 2-inch pieces)
- 1 tablespoon vegetable oil
- 1 cup chicken broth
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 orange, juiced
- 2 limes, juiced
- 4 large flour tortillas
- 1 cup cooked rice
- 1 cup canned black beans, rinsed and drained
- 1/2 cup shredded cheese
- 1/2 cup salsa
- 1/4 cup chopped cilantro
- 1 avocado, sliced
- Sour cream (optional)
Instructions
- Preheat oven to 300°F (150°C).
- Heat vegetable oil in a large ovenproof pot over medium-high heat. Add pork in batches, browning the pieces on all sides, about 8 minutes per batch.
- Return all pork to the pot. Add chicken broth, salt, pepper, cumin, oregano, onion, garlic, orange juice, and lime juice. Stir to combine.
- Bring the mixture to a simmer, then cover and transfer to the preheated oven. Cook until the pork is very tender, about 2 hours.
- Remove the pot from the oven. Use a slotted spoon to remove pork from cooking liquid and transfer to a large bowl. Shred the pork using two forks.
- Heat the flour tortillas according to package instructions to make them pliable.
- To assemble the burrito, lay a warm tortilla on a flat surface. Spoon a portion of the shredded pork onto the center, followed by rice, beans, cheese, salsa, cilantro, avocado, and a dollop of sour cream, if using.
- Fold the sides of the tortilla over the filling, then roll up tightly from the bottom, ensuring everything stays inside the burrito.
- Repeat with remaining tortillas and filling ingredients to make a total of 4 burritos.
