Ingredients
- 2 pounds flank or skirt steak
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 1/4 cup lime juice (about 2-3 limes)
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 teaspoon crushed red pepper flakes
- 2 tablespoons fresh cilantro, chopped
Instructions
- In a large mixing bowl, combine olive oil, soy sauce, lime juice, garlic, cumin, oregano, black pepper, salt, and red pepper flakes. Whisk together until well blended.
- Place the flank or skirt steak in a large resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish tightly.
- Refrigerate the marinating steak for at least 1 hour. For best results, marinate overnight. This allows the flavors to deeply penetrate the meat.
- Preheat your grill to a high temperature of about 450°F. If using a grill pan indoors, heat it over high heat until very hot.
- Remove the steak from the marinade, allowing any excess to drip off. Discard the marinade. Place the steak on the hot grill. Cook for 7-8 minutes on each side for medium-rare, or adjust time based on your preference.
- Remove the steak from the grill and transfer it to a cutting board. Let it rest for 5 minutes. This helps the juices redistribute throughout the meat, making it juicier.
- Slice the steak thinly against the grain, which ensures it remains tender. Sprinkle chopped cilantro on top for fresh flavor.
- Serve the carne asada with your choice of sides such as tortillas, rice, beans, or a fresh salad.
