  • 1 lb large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup cornmeal
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • Vegetable oil, for frying
  • Lemon wedges, for serving
  • Favorite dipping sauce, for serving

Instructions

  1. Begin by setting up your breading station. You’ll need three shallow dishes. In the first dish, add the flour. In the second dish, beat the eggs. In the third dish, combine the panko breadcrumbs, cornmeal, garlic powder, paprika, salt, and pepper.
  2. Pat the shrimp dry with paper towels. Season them with a little salt and pepper. This will help the breading stick.
  3. Dredge one shrimp in flour, shaking off any excess. Then dip it into the beaten eggs, ensuring it’s completely coated. Finally, press it into the breadcrumb mixture, making sure it’s fully covered. Set the shrimp aside on a plate. Repeat with the remaining shrimp.
  4. Heat about 1 inch of vegetable oil in a large frying pan to 350°F (175°C). A kitchen thermometer is helpful here to maintain the right temperature.
