Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 dried guajillo chiles
  • 2 dried arbol chiles
  • 2 tomatoes, diced
  • 1/2 onion, diced
  • 3 garlic cloves, minced
  • 1 cup water
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro for garnish

Instructions

  1. Begin by soaking the dried guajillo and arbol chiles in a bowl of warm water. Let them sit for about 10 minutes until they soften.
  2. Remove the softened chiles from the water and add them to a blender along with the diced tomatoes, garlic, and water. Blend until smooth.
  3. In a large skillet over medium heat, add the olive oil and diced onion. Sauté until the onion becomes translucent, about 4-5 minutes.
  4. Pour the blended chile mixture into the skillet with the onions. Stir and allow the sauce to simmer for about 5 minutes.
