Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 dried guajillo chiles
- 2 dried arbol chiles
- 2 tomatoes, diced
- 1/2 onion, diced
- 3 garlic cloves, minced
- 1 cup water
- 1 tbsp lime juice
- 1 tbsp chopped cilantro for garnish
Instructions
- Begin by soaking the dried guajillo and arbol chiles in a bowl of warm water. Let them sit for about 10 minutes until they soften.
- Remove the softened chiles from the water and add them to a blender along with the diced tomatoes, garlic, and water. Blend until smooth.
- In a large skillet over medium heat, add the olive oil and diced onion. Sauté until the onion becomes translucent, about 4-5 minutes.
- Pour the blended chile mixture into the skillet with the onions. Stir and allow the sauce to simmer for about 5 minutes.
- Season the shrimp with salt and black pepper, then add them to the skillet. Cook for about 3-5 minutes, or until the shrimp turn pink and are fully cooked.
- Add the lime juice to the shrimp and sauce, then give it a final stir.
