  • 1 lb beef skirt steak
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 large flour tortillas
  • 2 cups frozen french fries
  • 1 cup shredded cheddar cheese
  • 1 cup guacamole
  • 1 cup fresh salsa
  • 1 tablespoon sour cream (optional)

Instructions

  1. Start by preheating your oven to 425°F. Spread french fries evenly on a baking sheet and bake them for 20-25 minutes until they are golden brown and crispy. Flip halfway through for even cooking.
  2. While the fries are baking, prepare the steak. Pat the steak dry with paper towels and season it with salt, pepper, garlic powder, and onion powder on both sides.
  3. Preheat your grill or grill pan over medium-high heat. Once the grill is hot, add the olive oil to the pan, then place the steak on the grill. Cook for 4-5 minutes per side, or until a meat thermometer reads 140°F for medium rare.
  4. Once the steak is cooked to your liking, remove it from the grill and cover it with foil. Allow it to rest for about 10 minutes. This will help the juices redistribute and make the steak more tender.
  5. After the steak has rested, cut it into thin slices across the grain. This will ensure the meat is tender and easy to chew.
