Ingredients
- 2 lbs beef shank, with bone
- 8 cups water
- 1 medium onion, quartered
- 3 cloves garlic, peeled
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 2 ears of corn, cut into thirds
- 2 medium carrots, sliced
- 2 medium potatoes, peeled and quartered
- 1 small cabbage, cut into wedges
- 2 zucchini, sliced
- 1 chayote, peeled and cubed
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions
- In a large stockpot, add the beef shanks and water. Bring to a boil over medium-high heat while skimming off any foam that rises to the top to keep the broth clear.
- Add the onion, garlic, salt, and pepper to the pot. Reduce the heat to low, cover, and let simmer for 1.5 hours or until the beef is tender. Check occasionally to ensure the water level is maintained.
- Add the corn, carrots, and potatoes to the pot. Cook for 20 minutes or until the vegetables start to soften.
- Add the cabbage, zucchini, and chayote. Cook for an additional 15 minutes or until all the vegetables are tender. Taste the broth and adjust seasoning with salt and pepper, if needed.
- Before serving, stir in the chopped cilantro. Serve hot, accompanied by lime wedges for squeezing over the soup. Enjoy with warm tortillas if desired.
