Ingredients
- 1 whole chicken (3-4 pounds), cut into parts
- 12 cups water
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 carrots, peeled and sliced
- 3 stalks celery, sliced
- 2 onions, quartered
- 4 cloves garlic, minced
- 2 ears corn, cut into thirds
- 3 medium potatoes, peeled and quartered
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges for serving
- 1 avocado, sliced for serving
- Corn tortillas, for serving
Instructions
- Place the chicken parts in a large stockpot.
- Add 12 cups of water, salt, and black pepper to the pot. Bring to a boil over high heat. Once boiling, reduce the heat to low and simmer for 30 minutes, skimming any foam that rises to the top.
- Add carrots, celery, onions, garlic, corn, and potatoes to the pot. Continue simmering for an additional 40 minutes until vegetables and chicken are tender.
- Remove the chicken pieces from the pot and let them cool slightly. Once cool, remove the skin and bones, and shred the chicken meat.
- Return the shredded chicken to the pot and stir in freshly chopped cilantro. Taste the soup and adjust seasoning if necessary with additional salt and pepper.
- Serve the soup hot, with a wedge of lime, slices of avocado, and warm corn tortillas on the side. Squeeze lime juice into each serving just before eating for extra flavor.
