Ingredients

  • 1 whole chicken (3-4 pounds), cut into parts
  • 12 cups water
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 carrots, peeled and sliced
  • 3 stalks celery, sliced
  • 2 onions, quartered
  • 4 cloves garlic, minced
  • 2 ears corn, cut into thirds
  • 3 medium potatoes, peeled and quartered
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges for serving
  • 1 avocado, sliced for serving
  • Corn tortillas, for serving

Instructions

  1. Place the chicken parts in a large stockpot.
  2. Add 12 cups of water, salt, and black pepper to the pot. Bring to a boil over high heat. Once boiling, reduce the heat to low and simmer for 30 minutes, skimming any foam that rises to the top.
  3. Add carrots, celery, onions, garlic, corn, and potatoes to the pot. Continue simmering for an additional 40 minutes until vegetables and chicken are tender.
  4. Remove the chicken pieces from the pot and let them cool slightly. Once cool, remove the skin and bones, and shred the chicken meat.
  5. Return the shredded chicken to the pot and stir in freshly chopped cilantro. Taste the soup and adjust seasoning if necessary with additional salt and pepper.
  6. Serve the soup hot, with a wedge of lime, slices of avocado, and warm corn tortillas on the side. Squeeze lime juice into each serving just before eating for extra flavor.
