Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 medium green cabbage, roughly chopped
- 2 large carrots, sliced
- 1 can (28 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 bay leaf

Instructions
- Gather all your ingredients. Make sure your onion is chopped, your garlic is minced, your cabbage is chopped, and your carrots are sliced. Having everything ready makes cooking easier and more fun.
- In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Use a pot that’s big enough to hold all your ingredients comfortably.
- Add the chopped onion to the pot and sauté for about 5 minutes until it’s soft and translucent. Add the minced garlic and cook for another 1 minute, stirring frequently to prevent burning.
- Add the chopped cabbage and sliced carrots to the pot. Stir them with the onions and garlic, cooking for about 5 minutes until the cabbage begins to wilt.
- Pour in the can of diced tomatoes (including the juice) and 4 cups of vegetable broth. Stir everything together until well combined.
