Ingredients
- 1 cup white rice
- 2 cups water
- 1 tablespoon olive oil
- 1 pound chicken breast, diced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup shredded cheddar cheese
- 1 cup salsa
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- Rinse 1 cup of white rice under cold water until the water runs clear.
- In a medium saucepan, add the rinsed rice and 2 cups of water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 18-20 minutes or until all the water is absorbed.
- While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the diced chicken breast to the skillet. Season with 1 teaspoon each of chili powder and cumin, and add salt and pepper to taste. Cook the chicken for about 5-7 minutes, stirring occasionally, until it’s cooked through.
- Add the drained and rinsed black beans and 1 cup of corn kernels to the skillet. Stir to combine and cook for an additional 3-4 minutes until heated.
- Fluff the cooked rice with a fork and divide it equally among 4 bowls.
- Top each bowl of rice with the chicken mixture, then add shredded cheddar cheese, salsa, and diced avocado.
- Sprinkle fresh cilantro over the top of each bowl for garnish. Serve with lime wedges on the side.
