Ingredients

  • 1 cup white rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 pound chicken breast, diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Rinse 1 cup of white rice under cold water until the water runs clear.
  2. In a medium saucepan, add the rinsed rice and 2 cups of water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 18-20 minutes or until all the water is absorbed.
  3. While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  4. Add the diced chicken breast to the skillet. Season with 1 teaspoon each of chili powder and cumin, and add salt and pepper to taste. Cook the chicken for about 5-7 minutes, stirring occasionally, until it’s cooked through.
  5. Add the drained and rinsed black beans and 1 cup of corn kernels to the skillet. Stir to combine and cook for an additional 3-4 minutes until heated.
  6. Fluff the cooked rice with a fork and divide it equally among 4 bowls.
  7. Top each bowl of rice with the chicken mixture, then add shredded cheddar cheese, salsa, and diced avocado.
  8. Sprinkle fresh cilantro over the top of each bowl for garnish. Serve with lime wedges on the side.
