Ingredients

  • 1.5 pounds (700g) beef sirloin, cut into 1.5-inch cubes
  • 1/4 cup (60ml) olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon (15ml) fresh rosemary, chopped
  • 1 tablespoon (15ml) fresh thyme leaves
  • 1 teaspoon (5ml) smoked paprika
  • 1 teaspoon (5ml) ground cumin
  • Salt and freshly ground black pepper to taste
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced into rounds

Instructions

  1. In a mixing bowl, combine the olive oil, minced garlic, rosemary, thyme, smoked paprika, cumin, salt, and black pepper. Mix well to create the marinade.
  2. Add the beef cubes to the marinade, ensuring they are well coated. Cover the bowl and let the meat marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).
  3. While the meat is marinating, soak wooden skewers in water for 10 minutes to prevent them from burning on the grill. If using metal skewers, skip this step.
  4. Preheat your grill or grill pan to medium-high heat.
  5. Thread the marinated beef cubes onto the skewers, alternating with chunks of red bell pepper, yellow bell pepper, red onion, and zucchini slices.
  6. Place the skewers on the preheated grill. Cook for 3-4 minutes per side, or until the beef is cooked to your desired level of doneness and the vegetables are tender and slightly charred.
