Ingredients
- 12 large sea scallops, cleaned and patted dry
- 6 slices of bacon, cut in half crosswise
- 2 tablespoons (30ml) olive oil
- 1 tablespoon (15ml) fresh lemon juice
- 1 teaspoon (5ml) garlic, minced
- 1 teaspoon (5ml) fresh thyme leaves
- Salt and freshly ground black pepper to taste
- Lemon wedges, for serving
- Fresh parsley, chopped (for garnish)
Instructions
- In a mixing bowl, combine the olive oil, lemon juice, minced garlic, thyme, salt, and black pepper. Mix well to create the marinade.
- Add the scallops to the marinade, ensuring they are well coated. Let them marinate in the refrigerator for 10 minutes.
- While the scallops are marinating, soak wooden skewers in water for 10 minutes to prevent them from burning on the grill. If using metal skewers, skip this step.
- Preheat your grill or grill pan to medium-high heat.
- Wrap each scallop with a half-slice of bacon, securing it with a skewer. Thread 3-4 bacon-wrapped scallops onto each skewer.
- Place the skewers on the preheated grill. Cook for 3-4 minutes per side, or until the bacon is crispy and the scallops are opaque and cooked through.
- Remove the skewers from the grill and let them rest for 2-3 minutes.
- Garnish with chopped parsley and serve with lemon wedges on the side.
