  • 12 large sea scallops, cleaned and patted dry
  • 6 slices of bacon, cut in half crosswise
  • 2 tablespoons (30ml) olive oil
  • 1 tablespoon (15ml) fresh lemon juice
  • 1 teaspoon (5ml) garlic, minced
  • 1 teaspoon (5ml) fresh thyme leaves
  • Salt and freshly ground black pepper to taste
  • Lemon wedges, for serving
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a mixing bowl, combine the olive oil, lemon juice, minced garlic, thyme, salt, and black pepper. Mix well to create the marinade.
  2. Add the scallops to the marinade, ensuring they are well coated. Let them marinate in the refrigerator for 10 minutes.
  3. While the scallops are marinating, soak wooden skewers in water for 10 minutes to prevent them from burning on the grill. If using metal skewers, skip this step.
  4. Preheat your grill or grill pan to medium-high heat.
  5. Wrap each scallop with a half-slice of bacon, securing it with a skewer. Thread 3-4 bacon-wrapped scallops onto each skewer.
  6. Place the skewers on the preheated grill. Cook for 3-4 minutes per side, or until the bacon is crispy and the scallops are opaque and cooked through.
  7. Remove the skewers from the grill and let them rest for 2-3 minutes.
  8. Garnish with chopped parsley and serve with lemon wedges on the side.
