- 1 teaspoon (5ml) smoked paprika
- 1/2 teaspoon (2.5ml) red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 zucchini, sliced into rounds
Instructions
- In a mixing bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, thyme, parsley, smoked paprika, red pepper flakes (if using), salt, and black pepper. Mix well to create the marinade.
- Add the monkfish cubes to the marinade, ensuring they are well coated. Cover the bowl and let the fish marinate in the refrigerator for at least 15 minutes (or up to 1 hour for more flavor).
- While the fish is marinating, soak wooden skewers in water for 10 minutes to prevent them from burning on the grill. If using metal skewers, skip this step.
- Preheat your grill or grill pan to medium-high heat.
- Thread the marinated monkfish cubes onto the skewers, alternating with chunks of red bell pepper, yellow bell pepper, red onion, and zucchini slices.
