Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 4 strips of bacon
  • 1/2 cup shredded cheddar cheese
  • 1 avocado, sliced
  • 2 large flour tortillas
  • 1 tablespoon butter
  • Salsa (optional, for serving)

Instructions

  1. In a medium bowl, crack the eggs and add the milk. Whisk together until well blended. Season with a pinch of salt and pepper.
  2. Heat a skillet over medium-high heat and cook the bacon until crispy, about 5-6 minutes. Transfer the bacon to a plate lined with paper towels to drain excess grease. Once cool, chop into bite-sized pieces.
  3. In the same skillet, reduce heat to medium-low and add butter. Pour in the egg mixture. Stir gently with a spatula until the eggs are just set, about 3-5 minutes. Do not overcook.
  4. Warm the tortillas slightly in a clean skillet over medium heat or use a microwave for about 10-15 seconds, until pliable.
  5. Lay the warm tortillas on a flat surface. Divide the scrambled eggs evenly between the two tortillas. Sprinkle chopped bacon and cheddar cheese over the eggs. Add avocado slices on top.
  6. Fold the sides of the tortilla over the filling and roll the burrito tightly from one end to the other.
  7. Serve immediately with salsa on the side, if desired.
