Ingredients
- 4 large eggs
- 1/4 cup milk
- Salt and pepper to taste
- 4 strips of bacon
- 1/2 cup shredded cheddar cheese
- 1 avocado, sliced
- 2 large flour tortillas
- 1 tablespoon butter
- Salsa (optional, for serving)
Instructions
- In a medium bowl, crack the eggs and add the milk. Whisk together until well blended. Season with a pinch of salt and pepper.
- Heat a skillet over medium-high heat and cook the bacon until crispy, about 5-6 minutes. Transfer the bacon to a plate lined with paper towels to drain excess grease. Once cool, chop into bite-sized pieces.
- In the same skillet, reduce heat to medium-low and add butter. Pour in the egg mixture. Stir gently with a spatula until the eggs are just set, about 3-5 minutes. Do not overcook.
- Warm the tortillas slightly in a clean skillet over medium heat or use a microwave for about 10-15 seconds, until pliable.
- Lay the warm tortillas on a flat surface. Divide the scrambled eggs evenly between the two tortillas. Sprinkle chopped bacon and cheddar cheese over the eggs. Add avocado slices on top.
- Fold the sides of the tortilla over the filling and roll the burrito tightly from one end to the other.
- Serve immediately with salsa on the side, if desired.
