Ingredients
- 1 lb (450g) chicken breast, cut into bite-sized pieces
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 tablespoon freshly ground black pepper
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 2 green onions, chopped for garnish
Instructions
- In a medium bowl, toss the chicken pieces with cornstarch until they are well coated. This will help the chicken retain moisture and give it a nice texture after cooking.
- In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Once the oil is hot, add the chicken to the skillet in a single layer. Cook for about 4-5 minutes or until the chicken is golden brown and cooked through, turning occasionally. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the chopped onion, green bell pepper, and garlic. Cook for about 3-4 minutes until the vegetables are tender and the onion is translucent.
- Return the chicken to the skillet with the vegetables. Add the freshly ground black pepper, soy sauce, oyster sauce, rice vinegar, and sugar. Stir everything together until well combined. Cook for an additional 3-4 minutes, allowing the flavors to meld together. Taste and adjust seasoning if necessary.
- Once cooked, remove the skillet from the heat. Garnish the dish with the chopped green onions. Serve the black pepper chicken hot, ideally over a bed of steamed rice or noodles.
- Make sure to keep the chicken pieces in a single layer while cooking them in the skillet to ensure they cook evenly and develop a nice sear. For more intense black pepper flavor, adjust the amount of pepper according to your taste preference.
