Ingredients
- 3 pounds beef chuck roast, cut into large chunks
- 4 dried guajillo chilies, stemmed and seeded
- 2 dried ancho chilies, stemmed and seeded
- 5 cloves garlic, peeled
- 1 tablespoon apple cider vinegar
- 1 tablespoon dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 2 cups beef broth
- 2 bay leaves
- Salt and pepper to taste
- 1 large white onion, chopped
- 1/4 cup fresh cilantro, chopped
- Lime wedges for serving
- Corn tortillas
Instructions
- Boil 2 cups of water. Place the guajillo and ancho chilies in a bowl and cover them with the hot water. Let them soak for about 15 minutes until soft. Remember to wear gloves if your skin is sensitive to chili.
- Transfer the soaked chilies and their soaking water to a blender. Add garlic, vinegar, oregano, cumin, cinnamon, and a pinch of salt and pepper. Blend until smooth.
- Place the beef chunks in a large bowl. Pour the chili sauce over the meat and mix until each piece is well coated. Cover the bowl and let it marinate in the refrigerator for at least 2 hours or overnight for best results.
- Set your oven to 325°F (165°C).
- In a large oven-safe pot or Dutch oven, add the marinated beef and any remaining marinade. Pour in the beef broth and add the bay leaves. Cover and transfer to the preheated oven. Cook for about 3 hours, or until the meat is tender and falls apart easily.
- Warm the corn tortillas on a skillet. Chop the onion and cilantro, and have lime wedges ready for garnishing.
- Remove the bay leaves from the pot. Shred the beef using two forks. Serve the meat in the warm tortillas topped with chopped onion, cilantro, and a squeeze of lime. You can also serve the birria in a bowl with some broth as a soup.
