Ingredients
- 4 slices of beef steak (about 5 oz each)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon unsalted butter
- 2 cloves garlic, minced
- 1 shallot, finely chopped
- 1 cup dry white wine
- 1/2 cup heavy cream
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- 2 tablespoons freshly chopped parsley
Instructions
- Season the beef slices with salt and pepper on both sides. Leave them aside to absorb the seasoning.
- In a large skillet, heat the olive oil over medium-high heat. Wait until the oil is shimmering before adding beef.
- Place the beef steaks in the skillet and sear them for 3-4 minutes on each side, or until nicely browned. Remove the steaks and let them rest on a plate covered with aluminum foil.
- Reduce the heat to medium, and in the same skillet, add the butter. Once melted, add the garlic and shallot. Sauté for 2-3 minutes until translucent and fragrant.
- Pour in the white wine to deglaze the pan, scraping any fond from the bottom with a wooden spoon. Let it simmer for about 5 minutes.
- Stir in the heavy cream, Dijon mustard, and thyme. Let it cook for another 5 minutes until the sauce thickens slightly.
- Return the beef to the skillet to heat it through for about 3 minutes. Garnish with freshly chopped parsley before serving.
