Ingredients

  • 1.5 pounds beef sirloin, cut into thin strips
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 2 sprigs fresh rosemary
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1/2 cup beef broth
  • 1 tablespoon all-purpose flour
  • 1 tablespoon butter

Instructions

  1. Gather all the ingredients and kitchen tools you’ll need. This includes a sharp knife, cutting board, large skillet, and a whisk.
  2. Start by preparing your beef. Pat the beef strips dry with paper towels to ensure a good sear. Season with salt and pepper.
  3. Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the beef strips in a single layer. Cook until brown on all sides, about 4-5 minutes. If necessary, cook in batches to avoid overcrowding the pan. Once browned, remove the beef from the skillet and set aside.
  4. In the same skillet, lower the heat to medium and add minced garlic. Stir quickly for about 30 seconds until fragrant, being careful not to burn it.
  5. Add the beef broth, lemon juice, and zest to the skillet. Stir to combine and scrape up any brown bits from the bottom of the pan using a wooden spoon. These bits add great flavor!
  6. Toss in the rosemary sprigs. Let the mixture simmer for about 5 minutes to let the flavors meld together.
  7. In a small bowl, mix the flour with a few tablespoons of the hot liquid from the skillet to form a slurry. Whisk this mixture back into the skillet to thicken the sauce slightly.
  8. Return the beef strips to the skillet. Cook on low heat for another 15 minutes, allowing the beef to absorb the flavors. Ensure the beef is cooked to a minimum internal temperature of 145°F to ensure safety.
  9. Stir in the butter until melted into the sauce for added richness and to give the sauce a glossy finish.
  10. Remove the rosemary sprigs before serving. Taste the sauce and adjust seasoning with more salt or pepper if needed.
