Ingredients
- 1.5 pounds beef sirloin, cut into thin strips
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- 2 sprigs fresh rosemary
- 3 cloves garlic, minced
- Salt and pepper to taste
- 1/2 cup beef broth
- 1 tablespoon all-purpose flour
- 1 tablespoon butter
Instructions
- Gather all the ingredients and kitchen tools you’ll need. This includes a sharp knife, cutting board, large skillet, and a whisk.
- Start by preparing your beef. Pat the beef strips dry with paper towels to ensure a good sear. Season with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the beef strips in a single layer. Cook until brown on all sides, about 4-5 minutes. If necessary, cook in batches to avoid overcrowding the pan. Once browned, remove the beef from the skillet and set aside.
- In the same skillet, lower the heat to medium and add minced garlic. Stir quickly for about 30 seconds until fragrant, being careful not to burn it.
- Add the beef broth, lemon juice, and zest to the skillet. Stir to combine and scrape up any brown bits from the bottom of the pan using a wooden spoon. These bits add great flavor!
- Toss in the rosemary sprigs. Let the mixture simmer for about 5 minutes to let the flavors meld together.
- In a small bowl, mix the flour with a few tablespoons of the hot liquid from the skillet to form a slurry. Whisk this mixture back into the skillet to thicken the sauce slightly.
- Return the beef strips to the skillet. Cook on low heat for another 15 minutes, allowing the beef to absorb the flavors. Ensure the beef is cooked to a minimum internal temperature of 145°F to ensure safety.
- Stir in the butter until melted into the sauce for added richness and to give the sauce a glossy finish.
- Remove the rosemary sprigs before serving. Taste the sauce and adjust seasoning with more salt or pepper if needed.
