Ingredients
- 1.5 pounds beef top round steak, thinly sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 4 slices provolone cheese
- 1/2 cup fresh spinach leaves
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon tomato paste
- 1 tablespoon balsamic vinegar
Instructions
- Preheat your oven to 375°F (190°C).
- Place the beef slices on a clean surface. Sprinkle both sides with salt and pepper evenly.
- Lay 1 slice of provolone cheese on each beef slice. Top with spinach leaves, making sure they’re evenly distributed.
- Sprinkle Parmesan cheese, parsley, and minced garlic over the spinach. Press down gently to help the filling adhere.
- Carefully roll each beef slice starting from the short edge to encase the filling. Secure each roll with toothpicks.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the roulades on all sides until browned, about 1-2 minutes per side.
- In a small bowl, mix beef broth, tomato paste, and balsamic vinegar. Pour this mixture over the roulades in the skillet.
- Cover the skillet with aluminum foil and transfer it to the preheated oven. Bake for 45 minutes, until the beef is tender.
- Remove the roulades from the oven and let them rest for 5 minutes before serving. Remember to remove the toothpicks before serving!
- Tip: If the roulades seem difficult to roll, try using plastic wrap to help guide the roll tightly, then remove the wrap before searing.
