Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1 cup salsa
- 1 avocado, sliced
- 1/4 cup sour cream
- 1/4 cup chopped fresh cilantro
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chopped onion and minced garlic. Cook for about 2-3 minutes until the onion is translucent and fragrant.
- Add the ground beef to the skillet. Use a wooden spoon to break up the meat into small pieces. Cook for 5-7 minutes until browned and no longer pink.
- Sprinkle in the cumin, chili powder, paprika, salt, and black pepper over the beef. Stir well to combine the seasonings with the meat. Cook for another 1-2 minutes for the flavors to blend.
- Add the black beans to the skillet. Stir to combine with the beef mixture and cook for 2 more minutes until the beans are warmed through.
- Warm the flour tortillas either by wrapping them in aluminum foil and placing them in a 350°F oven for 5-7 minutes or by heating each in a dry skillet over medium heat for about 1 minute on each side.
- To assemble, lay a warm tortilla flat. Place 1/4 of the cooked rice, beef and bean mixture, shredded cheese, and a spoonful of salsa in the center of the tortilla. Add avocado slices and sour cream if desired.
- Fold in the sides of the tortilla over the filling, then roll up from the bottom to enclose the filling completely. Repeat with remaining tortillas.
