Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 cup salsa
  • 1 avocado, sliced
  • 1/4 cup sour cream
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chopped onion and minced garlic. Cook for about 2-3 minutes until the onion is translucent and fragrant.
  2. Add the ground beef to the skillet. Use a wooden spoon to break up the meat into small pieces. Cook for 5-7 minutes until browned and no longer pink.
  3. Sprinkle in the cumin, chili powder, paprika, salt, and black pepper over the beef. Stir well to combine the seasonings with the meat. Cook for another 1-2 minutes for the flavors to blend.
  4. Add the black beans to the skillet. Stir to combine with the beef mixture and cook for 2 more minutes until the beans are warmed through.
  5. Warm the flour tortillas either by wrapping them in aluminum foil and placing them in a 350°F oven for 5-7 minutes or by heating each in a dry skillet over medium heat for about 1 minute on each side.
  6. To assemble, lay a warm tortilla flat. Place 1/4 of the cooked rice, beef and bean mixture, shredded cheese, and a spoonful of salsa in the center of the tortilla. Add avocado slices and sour cream if desired.
  7. Fold in the sides of the tortilla over the filling, then roll up from the bottom to enclose the filling completely. Repeat with remaining tortillas.
  8. To serve, cut the burritos in half and garnish with fresh chopped cilantro. Enjoy your homemade beef burrito!
