Ingredients
- 3 pounds beef brisket
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cans (14.5 oz each) diced tomatoes
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 bay leaf
Instructions
- Preheat your oven to 325°F (163°C).
- Season the beef brisket generously with salt and pepper on all sides.
- In a large, ovenproof pot or Dutch oven, heat the olive oil over medium-high heat.
- Sear the brisket in the hot oil until browned on all sides, about 4-5 minutes per side. Transfer the brisket to a plate.
- In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent, about 5 minutes.
- Stir in the diced tomatoes, beef broth, tomato paste, Worcestershire sauce, thyme, paprika, and bay leaf.
- Return the brisket to the pot, making sure it is submerged at least halfway in the sauce. If necessary, add a bit more broth or water.
- Bring the mixture to a gentle simmer. Cover with a lid and transfer to the preheated oven.
- Cook for 3 to 3.5 hours, or until the brisket is tender and can be easily shredded with a fork. Tip: Check occasionally to ensure there’s enough liquid. Add a little more broth if needed.
- Once done, remove the pot from the oven. Let the brisket rest for 15 minutes before slicing against the grain.
- Serve the brisket with the tomato sauce spooned over the top. Enjoy with mashed potatoes, rice, or a side of your choice.
